KEEP YOUR KITCHEN EXHAUST CERTIFIED AND UP TO THE NFPA 96 FIRE CODES

Whether you’ve managed many commercial cooking facilities before or are just starting out, you probably know by now that most cities and townships require many different inspections before allowing a cooking facility to open. One inspection that is likely to fail a facility and delay opening is if the exhaust system contains grease buildup.

Another issue we recommend looking out for is seeing if your Certificate of Performance is out of date. If your certificate is out of date, you will need to have the system cleaned by a certified company before inspectors will allow the regular normal operations of your cooking facility. For newly built restaurants in Calgary, inspectors may require an exhaust system cleaning service agreement to be already in place before signing off on the licenses to open.


How often your system needs to be cleaned is dictated by the NFPA 96 fire codes and depends greatly on the type of cooking that is done, the hours of operation, and possibly your insurance requirements or franchise agreements. If it is part of a chain or franchise, you may have an internal policy that requires an increased number of cleanings per year.

Still not sure how often your facility needs to be cleaned? Take a look at the following facts:

  • If you have a wood burning system, it should be cleaned monthly.

  • Fast food restaurants that serve burgers and fries should be cleaned two to four times per year, depending on the volume of grease buildup and hours of operation.

  • A 24-hour restaurant is required to be cleaned four times per year.

  • If your facility uses woks for Chinese or Japanese cooking, it should be cleaned four times a year.

  • Regular all-purpose Western-style restaurants should be cleaned two times per year, depending on the volume of food served and the daily hours of operation.

  • If you have a church or a nursing home without deep fryers or BBQ grills, it will need to be cleaned once per year.

  • Some facilities require an inspection six months after being cleaned to ensure that grease buildup is not beyond the tolerances of a once-per-year cleaning.

  • The AHJ (i.e., the Authority Having Jurisdiction, which is almost always the fire department) ALWAYS has the final say on the minimum frequency that a system has to be cleaned.
